Kiridashi / Shirabiki 155mm N°6 SantokuThis Kiridashi is a marking cutting knife for chef, wood worker, knife enthusiast and polisher. The ni mai (2 layers) is made from 135Cr3 cutting edge with wrought iron cladding. The back (ura) is hollow ground with a 420mm wheel to ease sharpening and maintenance. Forged to shape and to geometry the blade is ground on water cooled grinding wheel with a stone finish bevel. Specs : Blade length : 155mm Blade height at the shinogi : 25mm Hagane : 135Cr3

It's an heavy knife compare to my normal work but with a good balance
