This has been aged in Pedro Ximinez Sherry Barrels This double wooden Pot Still produces full bodied and oily distillates and this release is no different with notes of aniseed balls, liquorice root and heaps of jammy fruit.

The Watercress gives very unique herbaceous notes and a peppery edge

Citrus and hints of Coconut at the forefront with a Vanilla core and hints of Spiced Oak and Peach on the finish

The rum is aged in oak

has discovered that the complex spirit from their stills is too rich to be tamed by a single style of cask
