Gyuto 220mm Ko-GyutoThis Scratched Nashiji Gyuto feature a long and strong blade, good distal taper, and a very thin tip. The san ma is made from Spicy white 26C3 core steel with xc15 soft steel cladding. The Hira (flat part of the blade above the bevel) is scratched then darken to create a beautiful contrast between the black Hira and the shiny bevel. This is a new finish I'm very happy to offer. Forged to shape and to geometry the bevels are ground on water cooled
