They hand pick the ripest cherries and sort them for quality. The cherries are dried on the top level of a multi level drying table until they reach 18% moisture. They're then moved to a lower level and rotated every 2 hours until they reach 11. 5% humidity. They're then rested for 30 60 days before being milled
